Carob is part of the history of the Algarve. It is thought to have been brought by the Arabs from the Middle East thousands of years ago and throughout history there are many records of its use. One of the curiosities about carob is that its seed served as a measure for the purity of gold. The purest gold, called solidus in ancient Rome, weighs the same as 24 carob seeds. From here was born the Carat which is equivalent to the weight of a carob seed.
Its use has changed over time and is now used in the food, cosmetic and pharmaceutical industry.
In the Algarve you can taste countless confectionery recipes that use carob flour that is extracted from the pulp of the pod after roasting and converting to powder. Our favorite is the carob truffles!
